Beans, Bolita  (100 days) Phaseolus vulgaris

Spanish settlers to the northern New Mexican region initially presented the Bolita bean to North America, which is ironic considering that bush beans were originally domesticated in Mexico. This heirloom dry bush bean is the ancestor to the modern Pinto bean.  It is much revered and celebrated throughout the desert southwest and performs well for us here in SW Oregon, maturing early and reliably. The beans are deep, pinkish-beige—almost salmon in color—and boast a taste richer in flavor than the Pinto bean, to which it is often compared. Part of the Slow Food Ark of Taste collection.
