Seven Seeds Farm
Atriplex hortensis (45 days for leaf, 90-100 days seed heads)
A tasty spinach relative, but one which tolerates the high heat of Summer. Eat when less than 18" for best flavor in the salad. As the name implies, this brilliantly green orach stands out, especially when allowed to go to seed. Seeded shoots make small, papery, colorful discs that can provide texture and interest to cut flower bouquets. Plant closely for smaller plumes. Spread 12" apart, Lime Green Orach seed heads can reach 6 feet. Direct sow. SSF
