WHEAT, Einkhorn Greek (110 days) Triticum monococcum
An ancient form of wheat that has been grown for over 10,000 years that is similar to Emmer. The name ‘Einkorn’ is German for single grain and refers to the flattened grain heads that are smaller and less robust than more modern wheats. Up to 40% higher in protein than modern wheats and many gluten intolerant people find that they can eat baked goods made with Einkorn. It is also suitable for growing your own wheatgrass for juice. Seed has a hull that is quite difficult to remove. Grows to 4-5’ tall.
