Anise, Pimpinella anisum (80-100 days)

Frost-sensitive annual in the Apiaceae family with lacy leaves and small white flowers producing umbels about 2 feet tall. Requires full sun and well-drained soil. Direct sow when soil reaches 60 degrees farenheight. The leaves and seeds have a sweet and mild, spicy flavor not unlike licorice. It is commonly used in cooking and is used as a digestive and anti-inflammatory. Seeds require cold stratification to germinate.
